Chocolate Cherry Granola

We’re living in some hectic times right now which is why I felt like it was necessary to create a comforting recipe to help ease our nervous systems and connect with baking. This is a super simple granola recipe that will definitely make breakfast a little more exciting! Make this with your family and share it with your friends and neighbours. It’s definitely one you’ll be making again and again!

I like this recipe because it’s a bit different from the usual oat-based granolas. Instead, this one uses quinoa flakes, but you can, of course, swap those out if you want to avoid pseudo-grains (quinoa is actually a seed!) It’s packed full of good, satiating fats and fibre. You can eat it alone as a snack or enjoy it with some coconut yogurt or kefir for breakfast.

Chocolate Cherry Granola

makes approximately 4 cups

1 cup quinoa flakes

3 tbsp cacao, sifted

2 tbsp coconut oil, melted

2 tbsp maple syrup

1/4 sea salt

1 cup pecans

1 cup pumpkin seeds

1/2 cup dried cherries

2/3 cup coconut flakes

1/3 cacao nibs

1/4 cup hemp hearts

Optional: serve with coconut kefir or yogurt, berries or other fruit of choice, or alternative milk.

  1. Preheat oven to 350F. Spread out parchment paper on a baking sheet.

  2. Combine all of the ingredients except for the cacao nibs, coconut flakes, hemp hearts and cherries.

  3. Spread out the ingredients on the baking sheet and bake for 5 minutes.

  4. Remove the granola and add in the cherries, mixing well. Bake for another 5 minutes.

  5. Remove the granola and add the coconut flakes, hemp hearts and cacao nibs. Let cool slightly before consuming. Store the granola in a glass jar, preferably in the fridge.
