Matcha Coconut Energy Balls

If the grey, chilly weather has got you down, I’ve got a bright, fresh colour to excite your senses! The green from these Matcha Coconut Energy Balls is really fun to eat and reminds me of the lush, green colours that will soon grace our Spring season. With only a few ingredients, these are sure to be a hit!

These are refined-sugar-free, gluten-free and dairy-free! You can make them nut-free by swapping out the cashews for sunflower seeds.The good fats from the coconut oil and cashews and fibre from the dates will balance blood sugar and keep you satisfied. Matcha is a finely ground green tea powder that is chock full of antioxidants, which are great for anti-aging and help prevent cell-breakdown. It is also high in L-theanine, an amino acid that helps to calm your nerves, making it a great alternative to coffee. Sometimes coffee can make us jittery, and matcha is a great way to get the energy boost without the shakes! Win! Rolling these balls in coconut make them look like truffles which ups the ante on decadence! Is it dessert…or a snack? You tell me.

Coconut Matcha Energy Balls

Yield: 12-13 balls

1 1/4 cup raw cashews

1/4 cup dates

1 tbsp maple syrup

1 tsp matcha powder

1 tbsp coconut oil

about 2 or 3 tbsp shredded coconut for coating

1. Blend cashews in food processor until ground.

2. Add dates, process until ground.

3. Add rest of the ingredients except shredded coconut and process until the mix comes together (it will start to clump).

4. Roll into teaspoon sized balls and coat in shredded coconut (best done by rolling on a coconut covered plate). Store in fridge.
