Pomegranate Cabbage Salad

This bright pink cabbage salad is packed with antioxidants, flavour and bright colours to boost your mood and nutrition! There is a slight sweetness from the figs and pomegranate, and a lovely earthiness from the cabbage. High in fibre and liver-boosting nutrients, this salad is a perfect addition to any meal. Bring it to a party or potluck to add some brightness and healthy food to the table!

Pomegranate Cabbage Salad

5-6 servings

1/2 large red cabbage, chopped

2 tbsp curly parsley, chopped

Handful walnuts

3 dried figs, sliced

1/2 small pomegranate (you can find this in the frozen section)

1 tsp nigella seeds (black cumin seeds)

Dressing:

Juice of 2 lemons

2 tbsp @acropolisorganics olive oil

2 tsp za’atar (blend of sumac, thyme and toasted sesame seeds)

1 tsp Himalayan salt

1/2 tsp pepper

1 tsp maple syrup

1. Mix all ingredients in a large bowl and set in the fridge.

2. This will taste best if you let it sit in the fridge for a couple hours… Otherwise it is just as good with crispier cabbage. Enjoy! ✌
